  1. I love potato soup, but I Use nitrate free bacon, and rice milk as replacement in the recipe.
    And I add garlic and sauté it in a little olive oil with the potato’s and onion first.

    I’m not a big fan of potato soup in general and my kids are extremely picky about eating anything with vegetables in it (imagine that!). However, I wanted to make some comfort food to make me forget about all the snow outside and we all loved this recipe! I made extra thinking I would freeze it in single sized portions but my husband wouldn’t stay out of it and I didn’t have any leftovers to freeze! This recipe is a keeper – thanks!
