I enjoy making this delicious sandwich on busy evenings. It is quick, easy, and pleases the entire family. Add a soup or salad and you have a great meal!
Open bread and add the cheese and pepperoni |
On other half add roasted tomatoes |
Place on heated Panini press (if you do not have a press you can make this like you would a grilled cheese on the stove) |
Press and cook until top is lightly browned and cheese is melted |
Slice like you would a pizza and serve!(I made tomato basil soup with oyster crackers along side) |
Easy Pizza Panini’s
1 loaf focaccia bread
1 cup pepperoni
10 slices of provolone
1/2 cup fire roasted diced tomatoes
Press and serve. Simple and tasty!

That looks yummy! And the possibility of fillings is endless!! I don't have a panini press but I think a huge cast iron skillet would work well! 🙂

Just wondering if your panini press is only a press or if yours is the one that is also a griddle? Saw those at Kohls and wondered if they worked well. My griddle is getting old and will need to be replaced and, with a small space, anytime an appliance can double up – is good! 🙂

One comment on making paninis: they work better with sliced loaf bread, such as the Old World Rounds they sell at Marcs. Using your bread above with the crust covering the whole surface, you are merely browning the crust again!
Also, do not buy a panini press if you have a George Foreman grill or a quesdilla maker. They all work the same way: lotsa heat on a small area!
