This homemade salsa is one of my all-time favorite recipes. I literally make it every week to snack on, to have over a salad for lunch, and/or to top off grilled chicken. Courtney is making some today at Women Living Well…come visit us there!

Hello Janelle, Have you decided to eat gluten free or just add a few of those GF recipes to your blog ? Please keep them coming my family has been trying to do gluten free for 6 months now myself for about a year due to health issues and I would love ideas from you !!!
Hi Cindy! I have been gluten free for 8 months now 🙂 I took a blood test and it showed I was intolerant to Wheat, eggs and certain dairy. So far so good! I cheated for the first time today with a piece of pizza- ugh, not worth it, lol! But, it was delicious. It really hasn’t been all that hard for me-after the first month it was smooth sailing. How are you doing on it?
It is pretty good I do notice a huge difference when I cheat which is less and less because I can sure tell the difference. I am so glad you are now GF I love your food am and always reading your blog to get new ideas and updates so I was selfishly happy to hear you to our now doing GF I appreciate anything you share here on your blog. I have an amazing Gluten free Chocolate chip cookie recipe if if you would like it let me know 🙂

Bethany Moreno’s Chocolate Chip Gluten Free Cookies-
1 C. Rice Flour
1/2 C. Corn Starch
1/2 C. Potato Flour
1/2 C. Coconut Flour
2 TSP Xantham Gum
1 1/2 tsp baking soda
1 tsp salt
1 C. Butter
3/4 C Brown Sugar
3/4 C sugar
1 tbsp vanilla
2 tbsp Honey
2 eggs
2 Tbsp Coconut Milk (add up to 5 more if to thick)
10-12 oz natural chocolate chips
Cream together butter and sugars. Add honey, vanilla, and eggs, and beat with mixer, Add in remaining ingredients and beat again until well combined. Add milk and beat one last time. Stir in Chocolate chips. Bake @ 350 for 10-15 minutes
