Ham Salad

If you enjoyed a Christmas Ham over the weekend you may be glancing in your refrigerator wondering to yourself “What am I to do with all these leftovers?!” This is a recipe I make when I have leftover ham…it is so simple, is great made into sandwiches, and as a spread for crackers.
leftover ham (with pineapple), sweet pickle relish, mayo
In your food processor, add your ham and 2 pineapple rings (optional)
Process to desired consistency
Add relish and mayo and run the blades a few times to mix evenly.
Spread on sliced bread topped with cheese for a delicious sandwich (I make these ahead of time and place them in Ziploc baggies in the refrigerator)
Or spread on crackers for a yummy mid-afternoon snack or appetizer!

Ham Salad

4 cups left-over ham (cut in pieces)
1/4 cup sweet pickle relish
1/3 cup mayo
2 pineapple rings (optional to taste)

Place ham and pineapple in a food processor and process until desired consistency. Add relish and mayo and pulse until combined. Serve on bread or crackers.

OH these recipes are great ideas – I hadn't thought of it. I just slap the left over ham on a bun with cheese and lettuce and mayo and there you have it – but I know my husband would like ham salad! Thnx for the recipe!

  2. Yummy sandwiches!!!!!! I will try this recipe quickly!!!! Today my husband and my daugther get the train for a journey on Paris (to see my husband's grandmother who's 95 years old, I rest at home with my son because he has his ski training every day!!!). I make them some sandwiches with the roastbeff from yesterday evening!!!!!
    Blessings from France.

Courtney, your idea works too! I love a good old fashioned ham sandwich! 🙂

  5. I really like the sound of this. It reminds me of something my Mom used to make with canned ham, but it would be so much nicer with a roast! I love the addition of the pineapple too. Thank you for sharing such a yummy sandwich idea. Happy New Year!
