I love sweet potatoes, but my husband does not…fancy that. I can’t tell you how many times I have tried to make them edible for him, but he has never shown an interest….until now! I am so excited to share the winning sweet potato recipe my husband finally enjoyed!
I paired these up with a pork tenderloin and green beans for a delicious homemade meal.
Peel 4 large sweet potatoes |
Shred with a cheese grater |
In a large skillet heat 1/4 cup butter on med-high |
Fry potatoes until lightly browned and soft- then sprinkle with brown sugar |
A great accompaniment to a pork tenderloin…enjoy! |
Sweet Potato Homefries
4 large sweet potatoes
1/4 cup butter
1/2 cup brown sugar
Peel potatoes and shred with a cheese grater. Heat butter in large skillet on med high heat. Add potatoes and cook until lightly browned and soft (about 10 mins). Sprinkle with brown sugar and serve!

I make them also, but just make thin slices and fry them in butter till crispy and brown..then stir in a little brown sugar and cinnamon..they are very good that way also and my hubby loves them

Stephanie-that is too funny! Did he notice? GoodGirl-yea! So glad you liked the enchiladas! You should be proud! Yessel, I used a marinated pork tenderloin that I purchased at my local grocery store! All I had to do was roast it in the oven…as a caution: these kinds of tenderloin take almost twice the time to fully cook than as described in the directions.but, they make an easy and delicious dinner! Thanks everyone!!!
