Shrimp Scampi over Pasta

This is going to crack you up- Of all things, my 7 year old loves shrimp! It is his absolute favorite thing to eat! Trust me, we have to limit his intake because….well, shrimp can cost a pretty penny! I’d like to share with you my Little Guy’s favorite dinner… Shrimp Scampi (Oh, help me! lol)
Start with large, fresh, peeled and deveined shrimp (uncooked)- rinse with cold water in colander

Get the rest of your ingredients ready: Butter, lemons, pasta, garlic, parsley, olive oil, salt and pepper

Melt butter and oil over medium heat

Add 4 cloves of minced garlic

In another large pot, boil water with a Tbsp of olive oil- add pasta and cook until tender. 

squeeze juice out of 2 lemons into a small dish

After butter, oil and garlic is cooking for about 2 mins add shrimp salt and pepper – cook for about 5 mins until the shrimp turns from pink to white

Turn heat off and add lemon juice and parsley

Combine well

Drain pasta but do not rinse- pour pasta into shrimp mixture and toss

Garnish with more parsley and lemon slice! 

This was NOT a pose…he honestly gets THIS excited when he gets his favorite dinner.

Shrimp Scampi over Pasta
1 lb of large uncooked shrimp, peeled and deveined (and on sale!)
3/4 lb linguini or pasta of your choice
4 Tbsp butter
3 Tbsp olive oil (1 tbsp is for water)
4 cloves minced garlic
1 Tbsp parsley
1/4 cup lemon juice (appx 2 lemons)
salt and pepper

Rinse shrimp in colander. Start to boil water in large pot with 1 tbsp of oil- when boiling add pasta and cook until tender. drain do not rinse. In another large pot melt butter and oil over medium heat. Add garlic and saute for 2 mins. Add shrimp, salt and pepper- allow to cook for appx 5 mins until shrimp turns from pink to white. Turn off heat add lemon juice and parsley. Toss in pasta- combine well. Enjoy!

    That is too funny! My seven yod's birthday is today and her favorite is shrimp scampi too–that is what is for dinner tonight with a strawberry cake and pots de creme. The girl has Bon Appetit taste…LOL! The only differenct in our recipes is I add a cup of white wine to the mix, adds a bit more flavor.

    Lol, well I am glad we are not alone here ladies! Suzanne..you may laugh, but the town we live in is "dry"..meaning there is no alcohol sales! No wine to be found at my local grocery store, lol. I guess Ill just add more butter! HAHAHA!!!!

    Okay Janelle, I have never heard of such a thing! Good grief if I couldn't use cooking wine in some of my recipes I don't know what I would do! Now, if you need some , I will ship it to you…LOL!

    I have to ask a silly question. We aren's shrimp eaters here–I'm always afraid of eating the wrong part–Do you eat the tail and all? That's not my main question. I'm wondering if shrimp were healthy? I mean should we TRY to eat more shrimp? I've heard that seafood is good for you. On the other hand I've heard that shrimp are on the bottom of the food chain and aren't the best for us. This doesn't stop me from eating brownies, cookies…etc. I'm not a whole "health-nut" but wondered if it's something we should "acquire" a taste for. Thanks. It looks delicious.

    Anonymous, that is not a silly question! When I purchase shrimp, I buy it deveined, out of it's shell..no tails..it is edible as is..I purchase it behind the counter at my grocery store…Shrimp is low in calories and fat-so it certainly is not the worst food you can eat…however I would not encourage you to force yourself to eat it for health purposes alone…there are far too many other foods that would be worth the extra effort if you were looking for health benefits. If you enjoy seafood, than have at it..but if not, no worries 🙂 Thank you for your question! Love to you, Janelle

  17. So this is my second recipe I have tried of yours and I honestly thought, no way this can be a hit as well. I was so wrong, my husband and I loved this!!! Not sure yet about my son but he will try when he gets a little older. I made it exactly as written and it has now become a staple in this house along with your crescent chicken. Tomorrow night, your meatloaf. Can’t wait!!!
