"That" Chicken Salad

Oooooo Ladies, we love a good Chicken Salad, don’t we?! It is just such a treat when this dish is served. Why? Because typically it takes a bit of time to make, is expensive, and yes…most times is deeeelicious (if you have a good recipe of course).

Because this recipe calls for an already roasted chicken (which at my store is $5), it reduces the time and price it takes to make this delicious salad! Sound good? It is…

The mixture of sour cream, mayo and Marzetti’s Slaw Dressing makes the texture lighter, the grapes add sweetness and the nuts add a crunch. A mixture of utter yumminess.

Feel free to be adventurous with your sweet/savory items and different ways to add texture.

Beware, make this just once, and everyone will ask you how to make “That” Chicken Salad!!!!

Enjoy!

Chicken, pecans, celery, onion, mayo, sour cream, grapes, Marzetti Slaw mix.

Pound pecan halves

Quarter grapes

Dice celery

Dice onions

Place it all in a bowl

Slice white meat off of chicken (you may add the dark meat if you like!)

Cut into bite sized chunks

I typically save the legs for the children for lunch the next day.

Add all wet ingredients

Mix well

And serve! (This chicken salad wishes it was on a croissant, but I didn’t have one! lol still YUMMY!)

“That” Chicken Salad

1 Roaster Chicken
1 cup quartered grapes
1 cup diced celery
1/2 cup diced onion
1/2 cup chopped pecans
1 1/2 cups mayonnaise
2/3 cup Marzetti’s Slaw Dressing
2/3 cup sour cream

(you may change fruit to apples, pineapples, or red grapes. You also may use water chestnuts and Chinese noodles in place of nuts)

Pull chicken off of breast and dice. Add all other ingredients and mix well. Serve on lettuce, croissants, or bread…also very pretty in phyllo cups!

Love to you, Janelle

  1. Would you believe me if I said I've never had Chicken Salad before?

Looks very good, I'll have to have this sometime!

  2. Suzanne says:

Yum Janelle! Must be chicken salad day , I just posted one today too:-) I make one similiar to yours but use cranberries and lemon yogurt in it too with the grapes. So refreshing on a hot summer day!

    Looks splendid! Thanks!

  4. Yummy! I love, love, love the addition of grapes & pecans (or walnuts) to chicken salad. Since I'm not big on raw onions, I add diced water chestnuts for a little extra crunch. I'm going to have to try using slaw dressing. Thanks for the tips! 🙂

  5. Crystal says:

I love chicken salad! I make mine similar! I leave out the onions and celery and use slivered almonds instead of pecans! Sometimes I add a chopped green apple! So yummy! I've never tried it with the slaw dressing!

  6. This looks amazing! I am so trying this!

  7. Heather G. says:

This looks really good! I think I would substitute almonds for pecans, since I don't care for pecans. I host a weekly recipe blog hop and would love it if you would link this recipe up and any other of your recipes in the coming weeks! golden-reflections.blogspot.com

I needed to clarify my other comment. : ) It sounded like my husband sent me the nasty recipe. *snicker*

This is "that" recipe I've looked for! My husband forwarded one to me from a lady at his office, and it had cold butter in it. Yes, BUTTER! I about gagged. Not that I don't like butter, but mixed up cold in chicken salad? My arteries started closing up as I read the recipe! Thanks for sharing this one! I can't wait to try it out!

I love chicken salad on a croissant. My husband and I love to have that and a fruit salad for dinner during the hot summer months. Wish my kids would eat it.
Thanks for sharing this recipe. I will give this one a try. The combination for the dressing part sounds interesting. Thinking I might have to add this to mext week's dinner plans 🙂

  13. Why do you use a boning knife to chop your vegetables?

  14. Janelle Nehrenz says:

Molly, because the other ones were in dish soap in the sink. lol. Told you, this girl is NO chef! Just a Mama!

  15. How much chicken would you say you use, in case I’m not using a roaster chicken? Sounds delicious!
