  1. Our children are grown so we are cooking for two again. One thing I like to do is make enchiladas and freeze them with wax paper around them and put them in a gallon zip lock type freezer bag. (easy to pull out one, or two or more) Heat up and make a salad and a meal is ready.
    When making chili or soup, freeze individual size or meal size for two in plastic freezer containers. Thaw and heat.
