One of my children’s favorite things to order at the old fashioned ice cream parlor downtown is a banana split. There’s something in the name that brings a joyful mood, isn’t there? And better yet- there are some healthy things going on in that sundae!
Yesterday morning, I decided it was time to make this naturally gluten-free treat into a breakfast dish. Good golly did it go over well. The kiddos were SO excited to see this concoction when they woke up!
Simply slice a banana lengthwise, add strawberry yogurt, strawberries, blueberries, a handful of granola (GF if you are sneezy) and melt 2 Tbsp of peanut butter and drizzle.
Fruit-check. Protein-check. Dairy-check. Carbs-check. Deliciousness-double check.
Glutenous-Minimus? Check!
It called for a breakfast picnic.
Mission accomplished.
- 4 bananas
- 1 cup strawberries
- 1 cup blueberries
- 1 cup strawberry yogurt
- 1 cup granola (GF or not)
- 2 Tbsp melted peanut butter
- Slice bananas lengthwise
- Spoon on yogurt to each one
- Top with blueberries, strawberries and granola.
- Drizzle with melted peanut butter
