Left over mashed potatoes have never tasted so good! The panko in this recipe adds a light and crispy crust to the traditional potato pancake…Serve hot off the stove with a cheese garnish and a side of applesauce or sour cream! OHhh, YUMmm!
(p.s. a great idea to save this recipe for after Thanksgiving!)
|Last night’s mashed potatoes, panko, eggs, flour, (salt, pepper, garlic powder, onion powder or even chopped onion if desired)|
|Combine all ingredients except panko in a mixing bowl|
|Shape into a disk form, about the size of the inside of your hand and coat with panko…form and pat it in there good so that they stay together in the pan well.|
|Add oil/Crisco to a skillet on med-high heat and brown pancakes on both sides|
