Potato Pancakes

Left over mashed potatoes have never tasted so good! The panko in this recipe adds a light and crispy crust to the traditional potato pancake…Serve hot off the stove with a cheese garnish and a side of applesauce or sour cream! OHhh, YUMmm!
(p.s. a great idea to save this recipe for after Thanksgiving!) 

Last night’s mashed potatoes, panko, eggs, flour, (salt, pepper, garlic powder, onion powder or even chopped onion if desired)

Combine all ingredients except panko in a mixing bowl

Mix well

Shape into a disk form, about the size of the inside of your hand and coat with panko…form and pat it in there good so that they stay together in the pan well. 
Add oil/Crisco to a skillet on med-high heat and brown pancakes on both sides

Serve with cheddar cheese and applesauce or sour cream.
ENJOY!!! 


Potato Pancakes
3 cups mashed potatoes
2 eggs
½ cup flour
1 cup Panko
Crisco for frying
*You may add a tsp of garlic powder, onion powder, or ¼ c chopped onion for an added kick.  
1. Mix eggs, flour and seasonings of your liking into your mashed potatoes. 2. Shape into a disk about the size of the inside of your hand 3. Lay flat into Panko and press, turn over and coat other side pressing again (it may seem akward, but molding it will not hurt it) 4. Preheat skillet on med-high heat and add appx 2 Tbsp of Crisco to pan 3. Brown on both sides, serve warm…I like to add cheddar cheese and applesauce or sour cream (depending on what I have on hand). ENJOY!
