Cherry and Pecan Salad


When I am entertaining for the holidays, I typically put the most effort into the main course…the salad and the dessert really need to be quick and easy so I can put the entire meal together in time. This is a salad I made over the weekend that I thought I would share…very simple, not a lot of cutting, and so yummy!  My guest even asked to take some home with her! The red and green colors make it look festive with very little effort.. 

This is how I made it….
Salad:
1 large box of organic mixed greens
1/2 cucumber (peeled and chopped)
1 bag of dried cherries
1 cup of chopped pecans
1 cup of swiss cheese finely shredded (you could also use a crumbled cheese)
Good Seasons Dressing:
1 packet of Good Seasons Italian dressing mix 
~Make according to directions using white vinegar and vegetable oil then, add 1 Tbsp of sugar and 1 Tbsp of Parmesan cheese. Shake well, then toss in the salad!

  3. Hello from France who I never see dried cherry!!
    Your salad is so nice, I will try her when my parents come (I think they don't know pecan nut either). I will remplace the cherry with dried cranberry (I can found that in France).
    Janelle, my children are so happy I found your site, they love american's food and It's so nice to change the habits!!!

    Suzel, that is so adorable that your children like American food! How sweet! Lol..some of our "habits" are not so good though…like "drive-thru" dining..do you in France have a lot of those too?

    Yes, cranberries would work perfectly here…and you can substitute pecans with any nut or sort with a crunch..like walnuts, sunflower seeds, even croutons. The mix of textures is what makes it!
