Horsefeed Salad (Asian Slaw)

This recipe was given to me by my Aunt Kelly 9 years ago on the day of my wedding shower. It is ALWAYS a crowd pleaser….I absolutely love the mix of different textures and flavors in this delicious dish! One of my favorite pot luck salads to bring!! Enjoy! ~Janelle

(p.s. this is not a “comfy in my jeans” recipe…but worth running an extra mile for!)

Shredded Cabbage, slivered almonds, Ramen noodles, pine nuts, sunflower seeds, scallions
Chop scallions
Place scallions with shredded cabbage in a large serving bowl 
Melt butter and oil in a large skillet on med-high heat 
Break noodles – do not cook/ discard season packet 
Saute all nuts and noodles in the skillet with butter and oil
Lightly brown like so…this gives the nuts and amazing roasted flavor.  (keep turning, do not burn)
Make dressing by combining sugar, soy sauce, red wine vinegar, and oil- whisk well.
Toss well with all ingredients and dressing
SO Good!!!! You are going to LOVE this one!

Horsefeed Salad (Asian Slaw)
2 10 oz bags finely shredded cabbage (or 1 head of finely shredded cabbage)
4 bunches of scallions (chopped)
1 cup slivered almonds
1 cup sunflower seeds
1 cup pinenuts
2 pkgs uncooked  and broken Ramen Noodles (discard flavor packet)
½ stick butter
¼ cup vegetable oil
Dressing
¾ cup sugar
2 Tbsp soy sauce
½ cup red wine vinegar
¾ cup vegetable oil
*Combine all ingredients
Saute all nuts, seeds and broken noodles in butter and oil until lightly golden brown. Combine cabbage and scallions in a large serving bowl, pour nuts, seeds and noodles over top. Toss with dressing just before serving.

  13. Could I make this with shredded Iceberg lettuce? I have health issues that don’t allow me to eat cruciferous vegetables (broccoli, cabbage, etc). But this looks SO good!
