Wild Berry Salad

A friend and I went out to lunch a couple of weeks ago and ordered the MOST delicious salads. We literally did everything but lick our plates clean..lol.

The funny thing is, that week, we both re-created this salad because we hadn’t had enough. Here are some photos of our “Copy Cat” Wild Berry Salads! YUM!

Mixed Berry Salad

(Per 1 salad)

2 cups of mixed greens

a small handful of:

blackberries, raspberries, strawberries, grapes,  cranberries,raw almonds

1 Tbs goat cheese (you may use blue cheese or feta)

Light poppy seed dressing on the side

1 chicken breast marinated in Italian dressing overnight and grilled

  2. Do you have any tips on how to grill a chicken breast without it getting dried out? Would love your advice. The salad looks amazing!!! ( also, what light poppyseed dressing do you like?)

    • Hi Jenny! I use Hartville Kitchen poppy seed….but if you don’t have that at your grocery store I would suggest Paula Deen’s or Newman’s Own. You can also make your own dressing -check out the poppy seed dressing made for “Strawberry Spinach Salad” – My chicken secrets- I buy organic chicken…the chicken breasts are smaller ,less “tendony” , and have a MUCH better texture. Marinating any meat in a dairy base will help with dryness. One of my favorite marinades is a simple mix of ranch and italian dressing. You could even let the meat marinate in milk over night and season with poultry seasoning while grilling! Grill on medium heat so not to cook the outside too quickly and take the meat off when it still has a *touch* of pink-meat continues to cook-I will even cover grilled meat on a plate with foil to help it cook just a little more without drying.
