Peach Tea

Oh, how I adore iced tea! There isn’t anything that sounds more refreshing to me on warm Summer day (and right now they are numbered, yikes!). This tea is infused with sweet, ripe peaches-they are on sale now, wohoo! A simple, yet special drink to serve your friends and family. Enjoy!

4 regular tea bags, 4 peach tea bags.


Microwave 2 cups of water for 2 mins. Steep tea bags in hot water and add baking soda {a trick that takes out the bitterness}


After tea bags have steeped for approximately 30 mins, take out an add sugar to warm water.

I purchase frozen fruit from a local farm market. You can tell these were very fresh when they froze them! I love having them on hand! Frozen fruit is excellent in tea…it cools and adds flavor!

Place concentrated tea and peaches in a carafe and add water.

Add ice.

Ahhhh….

Summer Peach Tea
Prep time: 5 mins
Cook time: 30 mins
Total time: 35 mins
Serves: 8
Ingredients
  • 4 regular tea bags
  • 4 peach tea bags
  • 1/8 tsp baking soda
  • 2 cups hot water
  • 1 cup sugar
  • 2 cups frozen or fresh peaches
  • 6-8 cups cold water
Instructions
  1. Microwave 2 cups of water in a pyrex cup for 2 mins
  2. Add baking soda and all tea bags.
  3. Let steep for 30 mins
  4. Pour concentrated tea in a large container
  5. Add sugar and stir well until dissolved
  6. Add peaches
  7. Add 6-8 cups of cold water
  8. Add ice
  9. Serve in ice-filled glasses and enjoy

Mmmm…there is something so “comfy” about chili simmering in the crockpot on a cool Autumn evening! Egg Experiment {and a Biblical Lesson}

{My kido’s first day of school yesterday}

Yesterday, my “Middlest” jumped into the van after her first day of second grade squealing with excitement. “Mama! we did the COOLEST experiment in class today- we just HAVE to do it at home so everyone can see what I’m talking about!” I asked her what kind of experiment it was and she began,”All’s ya have to do is put an egg in vinegar and the vinegar eats the egg shell and turns the egg into a bouncy ball!”

Hmmm….that did sound pretty cool. 

So, when we got home, I looked over her syllabus and sure enough…there was the egg experiment description with a little note. It said, ” This experiment shows us that just a little bit of acid, after a while, will eat away at the shell of the egg. The bible also tells us this lesson….just a little bit of sin, after a while, can start to chip away at us. In this particular instance the vinegar also hardens the egg. Likewise, our hearts can become hardened if we keep allowing sin into our lives.”  

I thought to share this with with you ladies in hopes that you too will do this experiment at home with your children! It sure does teach a valuable lesson -and yes, it’s pretty cool too. 

So thankful my daughter has such a wise and loving teacher. SO thankful. I get tears just thinking about it. 

Ehh hem…so, here we go.

Fill a clear container with white vinegar and drop an egg inside {you had no idea that this was all you had to do to be a “super cool mom”, did you?}. You can see the bubbles start to form around the egg immediately! 

“Do not be misled :Bad company corrupts good character.”

I talked to the kidos about this verse while we watched the bubble form around the egg shell.

I explained that sometimes the friends we choose to be around can make bad decisions – those decisions can, in turn, rub off on us too. We can choose to start being like them instead of how God wants us to be! It’s sooo important to reach out all people, but our closest friends should bring out the best out in us. If we know someone is doing something wrong, we need to love them enough to let them know it could hurt them and make the choice to do what God wants us to do in our own lives instead. If we don’t, before ya know it- those little lies here and there add up and cause a lot of damage! 

Can I get an amen?

I am certain my kidos will be on both sides here in life -haven’t we ALL been? Oh, how desperately we need a Savior.

This is about 18 hours later…

By 24 hours this is what it looked like- a rubber ball. Woah. Amazing.

Noooo. Not the bell.

By grace. Amazing grace…

What’s grace, you ask?

It’s getting something that we don’t deserve.

It’s a gift.

A”get out of jail free” card.

A pardon.

There isn’t anything we can do to get grace…it isn’t earned.

God can’t possibly love us anymore than he already does. So, there should never be guilt-driven deeds, tithes, works, etc. going on in our lives.

“For it is by grace you have been saved , through faith-and this is not from yourselves-it is the gift of God-not by works, so that no one can boast”

~Ephesians 2:8-9

So often we can get “religion” and “grace” intertwined….but truly, they aren’t the same. In fact, I get the “he bee jee bees” when people label me as a “religious” person- because I’m not. I’m saved by grace, not religion. I’m not religious at all, actually.

What I know is this-Because I love Jesus, what He did for me and continues to do for me, I can’t help myself but to read his word daily, be obedient to Him, pray to Him throughout the day, teach my children to love Him, tell others about Him, and {this is a really fun part} love others~ because when I love others, I am loving Him. 

“Truly I tell you, whatever you did for for the least of these brothers and sisters of mine, you did for me”

~Matthew 25:40

I encourage you, sweet friends….to stop… relax…. bask in the knowledge that if you were the only person on Earth- Jesus would have died for just YOU.

That’s really something.

That’s everything.

Give of yourself… because you can’t help yourself…to be motivated by the deepest love there ever was.

Ohhhh are these ever tasty! My sweet friend Katina has made these for me time and time again and I honestly can’t have just one….or two…eeeekkk, ok- maybe I have 3? BUT they are so healthy, it doesn’t matter, right???

Women Living Well Conference- What a JOY!

The FIRST Women Living Well Conference from left to right…Jen from Good Morning Girls, Clare from Peak 313, Ruth from The Better Mom, Courtney from Women Living Well, Whitney from Good Morning Girls, Darlene from Time Warp Wife, Karen Ehman from Proverbs 31 Ministries (and Karen Ehman dot com), Me from here (lol), and Angela from Good Morning Girls.

The very FIRST Women Living Well Conference….what a blessing it was. 

If you were able to make it, we were SO glad to have you there with us IN PERSON! It honestly was such a joy to see the faces of women we’ve chatted with online. Giving real hugs instead of cyber ones…hearing your journeys, seeing your smiles, sharing your tears, praying together…wow. I could go on and on!

As I look at the photo above…I can’t help but think of a quilt….intricately sewn together with life experiences, pain, joy, love, hope- woven together with the goal of being whole, up and running…all parts of the body being used to glorify Christ. One thing I noticed while rooming and working together at the conference was that each one of the ladies above has a deep desire to encourage women in the name of Jesus. In their own unique way…using their own unique gifts…with their own unique relationship with the Lord. How awesome is that? There are just no words. I do believe God put us ladies together according to His purpose because we all love Him and one another so much. I’m so proud of each and every one of these precious lives above. Ohhhh…I can’t even talk about anymore or I’ll cry! lol!

Clare from Peak 313 scolding me, lol! This was our girls night over Nutella pizza…Yes, I will create a replica recipe. It must happen. What a FUN night with lovely ladies!!!!

The next morning, Whitney with Good Morning Girls, prepared the most beautiful devotional for us. She shared the message to never forget our journeys, but to use them for God’s glory!! We are all broken…none of us feel worthy- but we are HIS! We cried, prayed, laughed….an amazing time. I’m pictured “make-up less and all cried out” with my dear friend Katina…she was the one who gave us the idea for a conference and helped plan the entire event!

At the conference from left to right..my Mother-in-Law Kathy, me, my Mom Diane , Grandma Ruth, and my Aunt Cathy. These women have played such valuable roles in my life- Ohhh, how I love them. God has used them to shape me, teach me, guide me, and the list goes on.

The BEST Twice-Baked Potatoes

There’s somethin special ’bout them taters…there suuuuure is!

These twice baked potatoes are simple to make, are ohhh so tasty and are a definite crowd pleaser. Make sure to add this recipe to you next outdoor BBQ!  They may look a little “fancy”, but only you will know they are just “comfy” 😉

*Gluten-Free

Preheat oven to 400. Wash, dry, and poke potatoes with a fork on both sides. Roll in olive oil and sprinkle with sea salt. Bake in the oven for 45 mins to 1 hour until a fork easily penetrates through the potato. There may be a little smoke…thats no biggie. It’s worth the crispy outside!

Take potatoes out and let cool slightly. Slice in half. Scoop out the inside of the potato being careful not to go through the skin (A grapefruit spoon works great here). Put the “potato whites” in a bowl.

Add sour cream, butter, cheese, salt and pepper and beat well.

Because the potatoes are still warm everything will melt nicely together like so.

Turn down the oven to 350. Place your potato skins on a baking sheet (I line mine for easy clean-up), put potato filling inside, top with remaining cheese and cooked bacon. Bake for another 20 mins until bubbly.

Add chopped scallions.

The BEST Twice-Baked Potatoes

Total time:
Serves: 12
Ingredients
  • 6 large Russet Potatoes
  • 1/4 cup olive oil
  • Sea Salt/Black Pepper
  • 4 Tbsp Butter
  • 3/4 cup Sour Cream
  • 2 cups Shredded Cheddar Cheese (halved)
  • 6 slices bacon cooked and torn into pieces
  • 1/4 cup scallions chopped for garnish
Instructions
  1. Pre-heat oven to 400 degrees.
  2. Wash, dry and poke potatoes with a fork. Roll in olive oil and sprinkle with salt.
  3. Place potatoes on a baking sheet and bake for 45-60 mins until tender. Test with a fork.
  4. Take out and let cool for appx 5 mins. Cut in half from top to bottom and scoop out insides, leaving the skins in tact.
  5. Put the potato whites in a large mixing bowl. Add butter, sour cream, 1 cup of cheddar cheese and salt and pepper to your liking. Mix well until combined.
  6. Place potato skins on a cookie sheet and fill with mixture. Top with cheese and bacon. Bake in a 350 oven for 20-30 mins longer.
  7. Garnish with scallions.

3 Ingredient Nutella Fudge (SO Easy!)

Now you see it….now you don’t! That’s the best way to describe this simple, yet delicious Nutella fudge. My sweet friend Katina thought to bring this to me last week….what a gift! I honestly have never seen a dessert vanish so quickly, haha!!! When she told me it had only 3 ingredients, I about fainted! You must try this one Ladies….it’s a keeper.

A HUGE thank you to Katina for making this treat for me AND for organizing the upcoming Women Living Well conference. She is such an amazing and supportive friend-I love her!!! Can’t wait to see everyone who will be attending!!!!

Microwave frosting for approximately 45 seconds, then combine with other ingredients in a bowl.

Mix well, spread in an 8×8 pan, and refrigerate for 30 mins until set.

  • 1 Cup Nutella
  • 1 Cup Peanut Butter
  • 1 16 oz Container Vanilla Frosting
Instructions
  1. Take the lid off of frosting and microwave for 45 seconds.
  2. Combine all ingredients in a mixing bowl-it will start to thicken.
  3. Spread into an 8×8 pan.
  4. Refrigerate for 30 mins until firm.
