Breakfast Banana Splits

One of my children’s favorite things to order at the old fashioned ice cream parlor downtown is a banana split. There’s something in the name that brings a joyful mood, isn’t there? And better yet- there are some healthy things going on in that sundae!

Yesterday morning, I decided it was time to make this naturally gluten-free treat into a breakfast dish.  Good golly did it go over well. The kiddos were SO excited to see this concoction when they woke up!

Simply slice a banana lengthwise, add strawberry yogurt, strawberries, blueberries, a handful of granola (GF if you are sneezy) and melt 2 Tbsp of peanut butter and drizzle.

Fruit-check. Protein-check. Dairy-check. Carbs-check. Deliciousness-double check.

Glutenous-Minimus? Check!

Breakfast Banana Splits

Ingredients
  • 4 bananas
  • 1 cup strawberries
  • 1 cup blueberries
  • 1 cup strawberry yogurt
  • 1 cup granola (GF or not)
  • 2 Tbsp melted peanut butter
Instructions
  1. Slice bananas lengthwise
  2. Spoon on yogurt to each one
  3. Top with blueberries, strawberries and granola.
  4. Drizzle with melted peanut butter

EASY Parmesan Crusted Chicken


IMG_4313This chicken recipe is so moist and flavorful. You can serve it along side of pasta or with a vegetable and potato. My entire family (and friends) love this one.

*GF option- use GF Italian seasoning.

I love the “kick” of freshly shredded Parmesan cheese.

By combining freshly shredded and pre-grated Parmesan cheese, we get coverage, texture and full flavor. Also add a packet of Good Seasons Italian dressing mix (one of my favorite ways to add flavor in an instant.)

Coat chicken and place on a foil lined pan.

Bake at 375 for approximately 25-30 mins depending one the size of your chicken breasts. Do not over bake, light pink/white is perfect as the chicken will continue cooking when you take it out of the oven.

EASY Parmesan Crusted Chicken

Ingredients
  • 6-8 chicken breasts
  • 2 cups milk
  • 2 eggs
  • 2 cups freshly shredded Parmesan cheese
  • 1 cup grated Parmesan cheese
  • 1 packet of Good Seasons Italian Dressing Mix
Instructions
  1. Marinate thawed chicken breasts in mixture of egg and milk. (4-6 hours)
  2. Combine cheeses and Italian dressing mix.
  3. Take chicken out of marinade and coat with mixture.
  4. Place on a foil lined pan and bake at 375 for 25-30 mins or until done.
