"Easy Peesy" Broccoli Cheesy Soup

 There is a wonderful restaurant in a rural area of Ohio called “The Barn”…. Anyone who has ever gone there knows about their delicious Broccoli Cheese Soup…I was talking to one of my friends, Margaret, over the weekend and she said she found a recipe just like it! Well…you know me, I just HAD to try it out! Here it is…simple and delicious, my favorite combo! Enjoy!

Saute butter and onions until soft

Add broth and bring to a boil

I used a steam pack of broccoli and simply microwaved it for 6 mins

Add noodles into the butter/onion/broth mixture and boil for 5 mins until noodles are softened.

Trim off stems of broccoli and chop finely
Add broccoli to soup and season with garlic powder
Add milk and cheese and let simmer until melted – season with salt and pepper
You will love this!

“Easy Peesy” Broccoli Cheesy Soup
3/4 c. chopped onion
3 T butter
3 c. chicken stock
4 oz. very thin noodles
1/2 t. salt
1-10 oz. pkg frozen, chopped broccoli, cooked according to directions & finely chopped
1/2 t. garlic powder
3 c. milk
1/2 lb. velveeta
pepper to taste

saute onions in butter until tender. add chicken stock & heat to boiling. add noodles & salt & cook for approx. 3 minutes. stir in broccoli & garlic powder & cook 4 more min. reduce heat & add milk & cheese, stirring constantly until cheese is melted. season w/ salt and pepper to taste.

    Looks incredible. I love soup recipes. Usually pretty easy and a one pot dish! Makes for a quicker clean up during the week. Also great leftovers for lunch the next day!

    Wow, this is Awesome…my husband just moved this past year to Doylestown on the outskirts of Orrville the next town over to the Barn. We just had dinner there the other night and about died with how great the salad bar was…by far the best ever!!!!! We packaged our dinner we ordered to go…no way we were passing 2nds on that salad bar and the soup-well lets just say I had more than one serving! I am so happy to see this recipe and to try this out for dinner-I don’t care if it is spring time!

    I have had this soup many times at the Barn restauant. Been years since I’ve been there. But I do remember when I had the original recipe and made it years ago, it was made with actual garlic cloves that were sauteed in butter, and the cheese was actually american cheese.
