Stuffed Pepper Soup (Crock Pot)

This Stuffed Pepper Soup tastes like the “real” thing…it is so simple, yet SO satisfying. A meal in itself! Left overs are just as good…or you can take some over to your neighbor πŸ˜‰

(this is a naturally allergy friendly food!)


Crushed tomatoes, tomato sauce, green peppers, red peppers, vegetable and beef broth, rice ( ground beef and seasoning not shown).


Brown ground beef in a large skillet and drain.


Dice peppers- I love the combo of red and green peppers- red peppers are a bit sweet and green peppers have a deep, earthy flavor.


Add all ingredients and seasonings into a crock pot and cook on high for 4 hours. You simply add uncooked rice and it will cook inside the broth! So easy.


A wonderful soup for a chilly Fall day. It smelled just like stuffed peppers in my home!

Total time: 4 hours 20 mins
Serves: 8
Ingredients
  • 4 cups vegetable broth
  • 4 cups beef broth
  • 2 lbs ground beef
  • 1 28 oz can tomato sauce
  • 1 28 oz can crushed tomatoes
  • 1 cup uncooked rice
  • 2 green peppers (diced)
  • 2 red peppers (diced)
  • 1/4 cup sugar
  • 1 1/2 tsp salt
  • 1 tsp ground pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
Instructions
  1. In a large skillet brown ground beef.
  2. When done, drain ground beef in colander.
  3. In a crock pot add all ingredients – rice will cook in soup.
  4. Set on high for 4 hours.

  1. There’s nothing like stuffed peppers! I can’t imagine how wonderful a stuffed pepper soup would be. Definitely saving this one. And now, because you put ‘crock pot’ on there, it reminds me that I have to get my chicken and rosemary and lemon in the crockpot for tonight!

  5. Definitely a must try! I will be making it it with meatless meat, YUM! Does the rice get too mushy for leftovers or is it okay? I would like to make a double batch…one for our family and one to take to friends…wondering if I should let them add the rice when they heat it for dinner? Thanks!

So, since your recent allergy diagnosis, I had noticed that you were posting all GF recipes and, I was kinda annoyed thinking “if that is all she is posting, I’m not going to keep looking at her recipes”. BUT, then I got thinking – who cares? LOL If the recipe is good, it’s good, right? The differance is I don’t have to shop for specific GF items . .. so, I’m back on board without the attitude now πŸ™‚ hehehehe

I try to make things that are just naturally GF and DF …when I found out about my food allergies I felt as though maybe I should stop blogging…I was embarrassed to tell my readers. I was actually feeling a bit of an identity crisis. But, God told me to keep on keeping on …and there are many recipes that work for everyone. Who doesn’t like chicken fried rice and stuffed pepper soup?! I will continue posting recipes that are not GF DF EF because I still have a meal ministry for people who do not have allergies. For example- I went to a Christmas cookie exchange last night and have tons of recipes to share. I think it has simply opened a door for people with allergies.   10. Made it today, it was awesome! Used ground venison instead of beef, and diced up a whole onion with it too. Was fantastic, my wife loved it too! Thanks.

  11. I followed this recipe word for word and mine came out very runny. I don’t know what I did wrong? It was filled to the rim of the crockpot and I had to drain some liquid out so it didn’t run over! I haven’t tasted yet but it smells good!

  12. Seems like 4 cups veg. and 4 cups beef broth would make it very runny. Does this fit in a regular size crockpot?

  14. I made this a few weeks ago it didn’t all fit in my crock so I used a large stock pot and simmered it on the stove for a few hours. It was absolutely delicious! Everyone loved it! I am going to make it again this week! Thank you for the awesome recipe!

  15. Love this soup! Instead of the vegetable broth, I used a box of Pacific roasted red pepper & tomato soup! I also used a whole chopped onion instead of onion powder, fresh minced garlic instead of garlic powder, brown sugar, and brown rice! Yum!!
