Easy Crockpot Pulled BBQ Chicken

Hi Ladies! I don’t know about you, but Fall is a very busy season for me. Right now I am still going full steam ahead with graduate school (for those of you who don’t know, I’m going to be a Clinical Counselor when I grow up). So, the next few recipes I will be sharing will be crockpot recipes! Do I hear applause?

This BBQ Pulled Chicken is so moist and tender it literally flakes apart. If you’re leery about cooking chicken in the crockpot, don’t. This chicken isn’t dry at all. You’re going to love it, I promise.IMG_4857
Make your sauce by combining BBQ sauce, Italian dressing, and brown sugar.

A shout out to Sweet Baby Ray-  my favorite prepared BBQ sauce.

Place chicken breasts in crockpot. I actually use frozen and it works great. Then add your barbecue sauce.

Cook on low heat for 6 hours and pull chicken apart. You can add more Sweet Baby Ray’s to it as well. Serve on a bun or alone with your sides.

Easy Crockpot Pulled BBQ Chicken

Ingredients
  • 6-8 small chicken breasts (4 if larger in size)
  • 2 cups BBQ sauce
  • 1 cup Italian Dressing (prepared in a jar, not seasoning)
  • 1/4 cup brown sugar
Instructions
  1. Whisk together BBQ sauce, Italian dressing and brown sugar.
  2. Place chicken in the crockpot and add BBQ sauce mixture.
  3. Cover and let cook on low for 6 hours.
  4. Pull chicken apart and drain excess BBQ sauce if need be.
  5. Serve on buns with additional BBQ sauce.

Creamy Crockpot Pork Chops

I found this delicious recipe at my local butcher’s store (shout out to Duma’s Meats! I love ya!) These Chops are officially called “Melinda’s Pork Chops” and are ohhh, so delicious and easy to make! Make sure you get a great cut of meat with bone in- otherwise you will be stuck with dry chops. If you are in my neck of the woods….go to Duma’s, no grocery store meat! 😉

Coat chops in flour, garlic powder, dry mustard and onion powder.

Brown in olive oil.

Place in Crockpot with Cream of Chicken Soup (do not add milk/water). Cover and let simmer for 6-8 hours until tender.

Creamy Crockpot Pork Chops

Ingredients
  • 6 – pork chops- “Bone in”
  • 2 tbls oil
  • 1/2 cup flour
  • 1 tsp garlic powder
  • 2 tsp dry mustard
  • 1/2 tsp onion powder
  • 1-2 cans cream of chicken soup
Instructions
  1. Mix flour and dry ingredients together and coat chops.
  2. Brown in olive oil on stove and put chops in a crock pot.
  3. Pour soup over top of chops (do not dilute soup) on low for 6-8 hours until tender.
  4. Cooking time will vary depending on crock pot and size of chops

Stuffed Pepper Soup (Crock Pot)

This Stuffed Pepper Soup tastes like the “real” thing…it is so simple, yet SO satisfying. A meal in itself! Left overs are just as good…or you can take some over to your neighbor 😉

(this is a naturally allergy friendly food!)


Crushed tomatoes, tomato sauce, green peppers, red peppers, vegetable and beef broth, rice ( ground beef and seasoning not shown).


Brown ground beef in a large skillet and drain.


Dice peppers- I love the combo of red and green peppers- red peppers are a bit sweet and green peppers have a deep, earthy flavor.


Add all ingredients and seasonings into a crock pot and cook on high for 4 hours. You simply add uncooked rice and it will cook inside the broth! So easy.


A wonderful soup for a chilly Fall day. It smelled just like stuffed peppers in my home!

 

 

 

Stuffed Pepper Soup (crock pot)

Cook time: 4 hours
Total time: 4 hours 20 mins
Serves: 8
Ingredients
  • 4 cups vegetable broth
  • 4 cups beef broth
  • 2 lbs ground beef
  • 1 28 oz can tomato sauce
  • 1 28 oz can crushed tomatoes
  • 1 cup uncooked rice
  • 2 green peppers (diced)
  • 2 red peppers (diced)
  • 1/4 cup sugar
  • 1 1/2 tsp salt
  • 1 tsp ground pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
Instructions
  1. In a large skillet brown ground beef.
  2. When done, drain ground beef in colander.
  3. In a crock pot add all ingredients – rice will cook in soup.
  4. Set on high for 4 hours.
