Cheesy Potatoes

 
 
 
This is my “go to” recipe for Cheesy Potatoes…it is easy, quick, and delicious! I bring this to family functions and make it for company all the time (leftovers are great too!)…Serve with dinner or along side brunch..it is a wonderful recipe to have on hand for the Holidays. Enjoy! ~Janelle 
2 bags of  “Simply Potatoes” (shredded or cubed), cream of chicken soup, sour cream, butter, onion, shredded cheddar cheese, bread crumbs, salt and pepper  
In a large bowl mix together potatoes, cheese, cream of chicken soup, chopped onion, sour cream, 1/2 stick of melted butter, salt and pepper.
In a greased 9×13 pan, spread out the potato mixture.
Melt 1 stick of butter in a small dish and add 2 cups of bread crumbs and mix well
Spread bread crumb mixture over top of potatoes. Bake in a 350 oven covered for 45 mins then uncover and bake an additional 15 or until bubbling with a lightly brown crust. 
YUUUUMMMMMmmmmm!!!!!

Ingredients
  • 2 bags of “Simply Potatoes” (these are sold by the eggs in your grocers refrigerator)
  • 1 can cream of chicken soup
  • 1 16 oz sour cream
  • 1/2 stick of butter melted
  • 1 onion chopped
  • 2 cups shredded cheddar cheese
  • salt and pepper to taste
  • Bread Crumb Topping:
  • 1 stick of butter melted
  • 2 cups of plain bread crumbs (you can also use crushed cornflakes instead)
Instructions
  1. Pre-heat oven to 350
  2. Mix together the first 7 ingredients and place in a 9×13 pan.
  3. Mix butter and bread crumbs, sprinkle on top of potatoes.
  4. Cover and bake for 45 mins, uncover and bake an additional 15 mins until bubble and lightly browned.

    Hey, guess what? My husband's family calls these "Party Potatoes" and someone from his famiy brings them every Christmas. We JUST talked about the fact that party potatoes have become a staple in our Christmas dinner (I still make mashed too). I was going to make the recipe off by memory, but now I can refer to this one. The only difference that I can see with ours is that we use Cornflakes for the top. (I think bread crumbs are nicer.)

    Darlene…That is what I call them too, lol! I had that name typed in, but thought Cheesy Potatoes describe them better for those who don't know this recipe. We also go back and forth with a bread crumb topping vs cornflake topping! Love them both! I just so happened to have bread crumbs in my pantry this time! Great Minds!

    I make this too and call it hashbrown casserole although I have never tried it with the bread crumbs on top. This is a delicious recipe and everyone I have made it for loves it! Sometimes we even have it at home for our family as a meal 🙂 I will refer to this recipe for the measurements too because I have it just in my head! Thank you!

  4. We call them Holiday Hashbrowns at my house. LOL I use a can of cheddar cheese soup instead of the cheddar cheese, though. Then I sprinkle top with cheddar cheese and fried onions. It's fun to read so many variations of Y-U-M!

  5. These look absolutely fabulous! We're doing pulled this and pulled that on rolls (sandwiches/boats) on Christmas Day, plus side dishes and desserts. I didn't have to go very far to locate a great side dish, did I?! Thanks!

    Not following the recipe exactly as I don't have it all on hand, but making the best we can of it for lunch today! MMMMM MMMMM. We added some dill for a different flavor twist and I loved it (dill has been a pregnancy flavor, lol). Thanks for the inspiration!

    I cant decide if I'd like it better for breakfast as Hashbrown casserole (as I've heard it called) or as a side dish at lunch or dinner… so versatile, just like pizza!
