How to Make “Meal Ministry” Affordable

One of the most common questions I get about meal ministry is about the cost. Food is expensive, but not only that the cost of packing it up can be just as expensive. Some throw-away containers are more costly than glass containers that can be used over again.

Here are a few examples I found at Marc’s that I wanted to share with you. When you’re out and about- keep your eyes peeled, then just stock pile good deals away for when you might use them.

It saves money and just makes sense.

Look at these beautiful cups with saucers- for just $1.99 for a pair! I immediately thought “Housewarming gift” – buy 6 for just $12.

This fruit bowl is adorable. For just $2.99, you can’t purchase a throw-away for under that. I would fill it with fruit salad for someone who is not feeling well and let them keep the dish.

The beautiful dish I shared at the top of the post was just $2.99 – again, a throw-away is pricier! I would make a calzone and wrap it on this plate and let my friend keep it.

Do you know of a child who could use a “pick me up”? These little sundae bowls are precious. For just 99 cents, I would buy 6, bring over ice cream and some toppings….

Creamed Chicken Crepes are one of my most sought after recipes- but they are hard to transport! For just 67 cents a piece these crepe dishes are worth buying.

Isn’t this a beautiful tray? If you have more than one thing to transport $4.99 is a deal. You could unload it and keep it yourself, or give it as a gift with the meal items.

This cute little basket was $4.97 – it would work great filled with sugar cookies for a little girl who isn’t feeling well.

How to Roast Red Peppers

Hi Everyone! I’m going to show you an easy way to roast red peppers. I know many of you have your own gardens and are bursting at the seems with these deliciously sweet and savory veggies. Sometimes the hardest part is knowing what to make with them! Well, here’s a recipe you can save in your mind…it’s that easy. I’ve made them this way for years!

Start off by rinsing, slicing in half and taking the seeds out of your peppers.

Roast peppers on a low broil for 5 mins, turn then roast for another 5 mins. Keep in mind that some ovens roast quicker than others. You’ll want to peer through the glass to make sure your peppers aren’t burning.

Use and oven mitt to take peppers out and immediately place them in a large Ziploc bag.

You can see here how the bag steams the peppers. Before we did this, the peppers were roasted, but still crunchy. This is going to soften them up a little…

Pour olive oil in a medium dish and add fresh garlic, salt and cracked pepper.

Slice your roasted peppers and add them to the mix.

*If you do not want your skins on, you will need to refrigerate your bag of roasted peppers, then the skins will come off easily before slicing.

Serve with a crusty bread and use the garlic oil to dip! Delicious.

How to Roast Red Peppers

Serves: 8
Ingredients
  • 6 red peppers
  • 1/2 cup olive oil
  • 4 cloves of garlic, crushed
  • salt and pepper
  • Bread for dipping
Instructions
  1. Set oven to a low broil
  2. Wash and slice peppers in half
  3. Roast in oven 5 mins a side- watch carefully!
  4. Take peppers out of oven and put in a large Ziploc bag
  5. Let steam for about 15 mins
  6. If you want your skins off place the bag in the refrigerator for about an hour
  7. Slice peppers
  8. In a medium dish combine olive oil, garlic, salt and pepper
  9. Stir together and serve with crusty bread

Easy Iced Coffee

Ahhh….it’s cool, creamy and caffinated. What’s not to love about this deliciously easy, iced coffee? Serve it as a treat on a warm and sunny afternoon or save money and replace it for your drive-through “guilty pleasure”.

If you’d like, add a little caramel syrup to the mix and it will taste very similar to an iced caramel latte.

Brew 4 large cups of coffee individually from your Keurig and pour them into a large liquid container. The large cups are equivalent to 10 oz each, so this would be 5 cups of coffee if you’re using a traditional coffee maker.

While the coffee is still hot, pour in 1/4 cup of sugar, 1/2 cup of water and 1/4 cup of cream. Taste -add cream and sugar to your liking after that. Fill the rest of your container up with ice.

Refrigerate until ready to drink!

  • 5 cups of strong coffee (4 large individual cups from your Keurig)
  • 1/2 cup water
  • 1/4 cup sugar (more to your liking)
  • 1/4 cup cream (more to your liking)
  • ice
Instructions
  1. Pour hot coffee into a large liquid container
  2. Add cream, sugar and water- Stir
  3. Taste and add more cream and sugar to your liking
  4. Add ice and keep refrigerated until ready to serve/drink
