Baked Potato Buffet/ Feasting in Fellowship Fridays

A “Baked Potato Buffet” is such a simple yet delicious side to make for your family dinner or for a large crowd. You can prepare all of your “dressings” ahead of time and keep your potatoes warm by wrapping in foil….giving you more time to prepare you main course. 


Baked Potato Buffet
(recipe may be multiplied)
4 Idaho Potatoes
4 tsp olive oil
coarse salt
Toppings on the side as desired (shown is butter, sour cream, bacon, and cheddar cheese)
Preheat oven to 400 degrees. Pierce potatoes with a fork on the top and bottom of each potato. Rub with oil and sprinkle with salt. Place in oven for 1 hour until fork penetrates easily. If making ahead you may wrap in foil to keep warm. 
*For microwave directions, wash and pierce potatoes and place on a plate. Microwave on high for 8 mins until tender. You will not have the nice consistency that you would in the oven, but it will still work!

A couple of days ago I posted how I was on the “Daniel Fast” This is the very smoothie I make when I hunger for a “treat”…hope you’ll enjoy it as well…
Strawberry- Banana’s n Creme Fruit Smoothies

Oh, how I love a cool, fresh, fruit smoothie! Make these for breakfast or have them as a treat on a sunny afternoon. Here is a delicious recipe you and your entire family will enjoy! This is a healthier option in place of going out for ice cream or making milkshakes at home, yet still just as satisfying!

 Strawberries, ice, bananas, orange juice, vanilla soy milk 

Blend well

Serve with a straw and enjoy! 

Strawberry- Banana’s n Creme Fruit Smoothies
(serves 4-5)
15 Whole Strawberries (Appx)
2 Bananas
1 Cup Vanilla Soy Milk
1/2 Cup Orange Juice
2 Cups of Ice
Blend well and enjoy!

Cauliflower Cheese submitted by 21st Century Housewife!!!

Last Sunday I was at a loss for what to make for dinner. I grocery shop on Monday and was left with an array of different ingredients in my refrigerator. I had most of the ingredients for April’s recipe so I went for it! I supplemented some of them as seen below.
Ladies, DO NOT be afraid to supplement ingredients!
(BTW- My husband who doesn’t typically eat left overs had this for lunch the next day…he LOVED it!)

April…Girl, I know you said this is NOT a one pot dinner…look at what I did to your beautiful recipe! I just threw it all in there! LOL! Basketball was starting and I had to hurry! 

I steamed the cauliflower with just a little water on the stove on high-10 mins.

Threw in a little garlic and sauteed.

All I had were bow tie noodles…it did the trick

Started with a basic white sauce

Threw in the steamed cauliflower with the rest of the veggies

Added the cheese to the white sauce…this was delcious

Put it all together in a 9×13, topped it with cheese and placed it under the broiler

Whala! This did not take more than 35 mins to make and was DELICIOUS!!! 

This is April’s recipe word for word…
Cauliflower Cheese Pasta
1 pound of macaroni or pasta shapes 
½ to ¾ cup chopped bacon or pancetta
One medium cauliflower, washed and broken into florets
1 leek, washed and thinly sliced (or substitute one onion, finely chopped)
1 bunch asparagus (or substitute 1 cup frozen peas if asparagus is unavailable)
1 red pepper, finely chopped
2 tablespoons butter
2 tablespoons all purpose (plain) flour
approximately 2 cups of milk
1 generous teaspoon of Dijon mustard
2 good handfuls of cheddar cheese plus more for sprinkling
Salt and pepper to taste
Steam the cauliflower, leek (*for onion see note below), asparagus and red pepper in a steamer until cooked. You will probably need to put the cauliflower in first for about ten minutes and then add the rest of the vegetables as they do not take nearly as long to cook.  Once they are cooked – firm and not soggy – set them aside.
Cook the pasta according to package directions.
Fry the bacon or pancetta in a small pan until crisp. Set aside and keep warm. 
(*If you are using onion, do not steam it, rather add it to the melted butter in the step below and gently sauté in the saucepan for two to three minutes before adding the flour.)
Meanwhile, melt the butter in a small saucepan. Add the flour and stir together thoroughly.  Cook for a couple of minutes, stirring constantly.  Gradually pour in the milk, continuing to stir, to make a thick sauce.  You will need to stir this constantly until it thickens. Stir in the mustard, then add the cheese and let it melt.  Now gradually add a bit more milk until you get a nice consistency that is not too thick or too thin, just enough to coat the vegetables and pasta. Add the salt and pepper to taste.
When the pasta is done, drain it and set aside. 
When everything is ready, mix the cooked pasta and cooked vegetables together in a large casserole.  Pour the cheese sauce over and toss until everything is coated.  Sprinkle a bit more cheese over top and place under the grill.  Let it brown up a little and serve it sprinkled with the crispy bacon or pancetta if using. Taste and sigh.
As I said, it isn’t all that quick and maybe it’s less than easy, but oh my, is it worth it for this bowl of comforting yumminess! You can also make this ahead of time, store it in the fridge and reheat it when you need it. Just fry up the bacon or pancetta at the last minute if you are going to do that.

French Dip Sandwich/ Feasting in Fellowship Friday

This is one of my all time favorite sandwiches. I love how tender this roast is when it simmers all day in the crock pot! Serve with a buttered bun, melted swiss, and au jus for dipping… Mmmm!

Trim off fat from roast

Slice red onions

In a medium pan heat oil on medium high and brown roast on both sides.
(This will not cook the meat on the inside, just the first 1/2 inch on the outside)

Add one can of french onion soup and 2 cups of beef broth to crock pot

Add roast to crock pot 

Saute onions in the same oil and pan used for roast.

Place onions on roast, cover with lid and let simmer in crock pot on high for 6 hours. 

Roast will be very tender and flake apart easily when done. 

Open hoagie buns, butter and spread swiss cheese on one side. Broil for 5 mins until cheese is melted.

Add roast, onions, and au jus on top. 
Slice and serve with a side of au jus! Mmmm…
French Dip Sandwiches(Makes 6)

3 lb boneless rump roast
1 can french onion soup
2 cups beef broth
1 large red onion sliced
3 Tbsp olive oil (for browning/sauteing)
6 hoagie buns

Trim fat from roast. Pour oil in a pan and heat on med-high, add roast. Brown roast on both sides. Place soup and broth in the crock pot. Add roast to the crock pot. Saute onions in the pan you used for the roast with the same oil/drippings. Place onions on top of roast and cover crock pot (your roast will not be completely covered). Let simmer on high for 6 hours. Roast will flake apart easily- tear pieces apart to place on buns. Butter buns, add swiss cheese to one side and broil for 5 mins. Place meat on the other side and top with onions and drizzle with au jus. Serve with a side of au jus for dipping.

It’s Feasting in Fellowship Friday, and we have a guest blogger today, my friend and fellow blogger Darlene Schacht.

3 Ways to Eliminate Bad Habits

Eliminating bad habits is definitely not the easiest thing to do. Nail chewers have probably heard of–maybe even tried–the nasty tasting polish that reminds us to keep our fingers off the lips. And those of you who are lip lickers, have likely felt the sting of cracked lips in the winter. Habits range anywhere from picking skin, to blinking our eyes, to grinding our teeth. Most of us have them, yet most of us wish we didn’t.

Today I’m focusing on eating habits–exchanging the bad for the good. Overeating, eating the wrong foods, and eating for comfort are few among many habits we’d like to see changed.

Let’s look at three ways to start doing that:

  1. Listen

    Looking at the thin eaters in my life, I’ve noticed that those who’ve successfully lost weight and kept it off, or those who have never been concerned about weight are the ones who exercise their ability to distinguish hunger from emotion, necessity from luxury, and appetite from passion. Essentially they eat to survive, while others survive to eat.

    Have you ever stuffed yourself with so much junk food, and then vowed never to touch it again? Why? What reward did you get? Payoffs will differ depending on personality: a buzz, entertainment, attention, stress relief, comfort, etc.

    Food can be a comforting entertainment that one seeks to fill a void when that void is calling for something else. The best solution one can find is this: “listen.”

    Find out what that something else is. Maybe you’re just bored, you might be depressed, or possibly you’re looking for something to ease your discomfort. Food is easy to grab on the go. It’s an uncomplicated, effortless, and simple solution to our needs, but it isn’t necessarily the best fuel to keep you moving ahead. Listen to the signs of your body to determine what and how much you require. Decipher it from what you desire. The two are completely different–master this concept and you’ll be a thin eater.

  2. Quench Appropriately

    Many dieters who have successfully lost weight have discovered what are known as “transfer addictions,” meaning that while they’ve mastered their addiction to food, they’ve transferred their focus from one addiction to another.

    Let’s look at it this way: if you’re getting the desired attention you need from eating like swine on a Saturday morning, as soon as you remove the trough you’ll likely find something else that draws just as much attention to you. The alternative solution may not be a better one.

    Remember the story of the Samaritan woman who came to draw water? It’s found in John chapter 4. While the disciples were out, Jesus met a woman at the well, and asker her for a drink. He knew that this particular woman had a void inside her that led her to thirst for something more in her life. It moved her to return to the same proverbial well time and again hoping to fill her pain with something that would last—something that would quench her thirst, until finally He came offering an everlasting well of hope. Maybe this void resulted in failed marriages time and again, since we know she had five. One can only guess, but we do know that the same Spirit of life in Christ Jesus is there for us too.

    Earthly things can fill the void for a moment, maybe even a week, but when we are quenched by the Spirit of comfort we a satisfied from within, no longer having a need return to the well time and again.

  3. Flee and Pursue

    Losing weight is a life-changing experience that for many women has resulted in a spiritual vacuum of sorts. Any time we eliminate things from our life, we create a need to be filled. That’s a great thing when you’re filling up with Christ. Not such a good thing when we give up cola, but crave sugar so much that we pop chocolates all day. We’re complicated beings, aren’t we? The simple solution is to replace our wants with His (more of you, Lord—less of me), and bad habits with good.

    It’s one thing to flee bad habits that hinder our walk, but it’s equally as important to pursue habits that are better. Consider this verse, 2 Timothy 2:22, “Flee the evil desires of youth, and pursue righteousness, faith, love and peace, along with those who call on the Lord out of a pure heart.”

    Truly changing from within is a two-part process (while maybe it’s a trillion part process, but we’re narrowing it down to two here) that must be followed in order to achieve real success. The first is turning away, and the other is moving forward with a thirst to be filled.

    Consider Matthew chapter twelve where Jesus said, “When the unclean spirit is gone out of a man, he walketh through dry places, seeking rest, and findeth none. Then he saith, I will return into my house from whence I came out: and when he is come, he findeth it empty, swept, and garnished. Then goeth he, and taketh with himself seven other spirits more wicked than himself, and they enter in and dwell there: and the last state of that man is worse than the first. Even so shall it be also unto this wicked generation.” – Matthew 12:43-45

    This prophecy was in relation to those of that generation who rejected Christ, but it also serves well to describe the danger of an empty home, and importance of filling our heart with good.

    Let’s look at that concept in relation to living well. You can clean a house—eliminate bad habits, until your temple is swept to empty—but if you don’t fill that house with something better, you’ll eventually fill it with something worse. The goal is to concentrate on good habits in addition to eliminating the bad.

    Let’s look at a few ways we can fill an empty house:

  • Replace 1/3 of your diet with fruit and vegetables
  • Start each day off with prayer and Bible study
  • Find like minded friends
  • Join a support group
  • Seek out healthier places to eat
  • Spend more time planning and preparing good meals
  • Walk
  • Exercise
  • Drink water
  • Clean your house
  • Pray for the comfort of the Holy Spirit!

If you are planning on making life changes, giving up some of the foods that you like, and ultimately taking off weight, ensure that you replace every one of those bad habits with good. Flee and pursue!
